The grapes are harvested from 45 to 60-year-old vines spread across plots in Vézelay, Volnay, Mercurey, and parts of the Côte Chalonnaise. Crafted using native yeast, whole-cluster fermentation, and gentle maceration. It is aged for roughly 8 months in stainless steel, older oak barrels, and foudres before blending.
